Quick Mango Bread

Mango-Bread

We’re getting ready for Boston JerkFest, and how better to do so than with a delicious and simple summer bread? Try this version with rich, sweet mango juice included. Yummm.

Ingredients:

2 cups sifted flour
4 teaspoons baking powder
½ cup sugar
½ teaspoon salt
½ teaspoon nutmeg
2 eggs, well beaten
¾ cup mango juice
3 tablespoons melted shortening

Cooking Instructions:

Sift first four ingredients together. Combine eggs with remaining ingredients. Add to dry ingredients, mixing only enough to dampen flour. Place in a greased loaf pan. Bake at 350 degrees F. for 1 hour.

Makes 1 loaf.
