Nikki’s Jerk Chicken
Hi there. I am sharing my jerk chicken recipe. My secret is to add a little soy sauce for color and taste. I hope you like it.
1 whole chicken cut up into medium size parts
1/4 cup of jerk sauce (I like Walkers Wood)
1/4 cup of soy sauce
4 cloves of fresh garlic, crushed
2 tablespoons onion powder
1 tablespoon of ground black pepper
8-10 pieces of all spice
2 bunches of scallions diced
Salt to taste
Wash chicken and marinate chicken with all of the above ingredients; except the scallions for a minimum of 1 hour and up to 24 hours in the refrigerator. Heat oven to 400 degrees and place chicken in shallow pan. Bake for an hour+ (depending on size). Turn chicken pieces over after 30 minutes to ensure that both sides are nice and brown. Add diced scallions after 45 minutes. Serve with rice and beans, white rice, or bread and enjoy!
